Zucchini Rolls with Goat Cheese
serves 4

Instructions

  1. Using a mandolin, slice the zucchini lengthwise in 1/8-inch strips. Salt both sides, then lay on paper towels 15 minutes to drain and soften. Rinse, then pat dry.
  2. Combine the goat cheese, thyme and cayenne, then season to taste.
  3. Lay a strip of zucchini on your work surface. Spread 1/2 t each of the cheese mixture and the olive tapenade on one end of the strip, and 2 or 3 chive sticks next to the cheese so that they protrude out one side of the strip. Roll up, and set on end.
  4. Plate and serve.
