Zucchini Rolls with Goat Cheese
serves 4
Ingredients
- 2 ea small zucchini, washed, dried, ends trimmed
- Kosher salt
- chives, 2-inch sticks
- 4 oz goat cheese, softened
- 1 t fresh thyme, chopped
- cayenne
- green olive tapenade
Instructions
- Using a mandolin, slice the zucchini lengthwise in 1/8-inch strips. Salt both sides, then lay on paper towels 15 minutes to drain and soften. Rinse, then pat dry.
- Combine the goat cheese, thyme and cayenne, then season to taste.
- Lay a strip of zucchini on your work surface. Spread 1/2 t each of the cheese mixture and the olive tapenade on one end of the strip, and 2 or 3 chive sticks next to the cheese so that they protrude out one side of the strip. Roll up, and set on end.
- Plate and serve.
